I use PayPal for handling payments -- they have a proven track record of high security. You can pay with a credit card through them or you can choose to pay with your PayPal account. I never see your credit card information, let alone store it. As you choose your items, they are placed in a shopping cart in PayPal's system. When you click to view your cart, you will see a summary of your items in the cart. From there, PayPal will instruct you on how to proceed. After completing your transaction you will come back to my site. After much research, I believe this is the most secure method of accepting payments.
I am constantly making pottery and adjusting my inventory. I do attend weekly farmers' markets here in Vermont. Sometimes the markets are unusually busy and my inventory gets depleted unexpectedly. Meaning... I may not have your particular item on hand when you place your order. After placing your order, you will get a confirmation e-mail that is automatically generated to let you know that things went through on the technological side of things. I will send you another e-mail (usually within one business day) letting you know when your order will ship. If your item is on my shelves, I ship within two days of your order getting sent to me.
